Michael's Big Baptism Weekend!

On Sunday, February 28th, Michael was baptized.



It was a nice service and we are so happy for him!

We had lots of family here for the weekend and hope everyone had a nice time. Here is a rundown of what we had:

Saturday night dinner:



  • Bruschetta (from Costco)
  • Lasagna rolls
  • Ceasar Salad
  • Bread
  • Strawberry Cheesecake (from Costco)
  • Wine (Frontera cab/merlot from Costco)

Sunday Brunch


  • Individual Quiches
  • Turkey Sausage
  • Breakfast potatoes
  • Fruit salad
  • Pumpkin and Banana bread (Margie brought)
  • Cake (from Costco)
  • Coffee/Juice

I thought everything went pretty smoothly food-wise. It is always hard to plan and prepare meals while I have to also feed Michael. I left to go feed him while our Saturday night dinner was in the oven and it got a little done, but it was nothing a little extra red sauce and parm. cheese couldn't fix! We had lots of wine on Saturday night (a great day at Costco!) and I think that really helped everyone relax a bit. If you can't cook, at least make sure everyone has plenty to drink, right? :o)

Sunday morning went pretty smoothly as well. It was a rush trying to get people out the door by 7:15 for church, but we made it with plenty of time to spare. Margie brought some breads so people could have some coffee and a bite to eat before the service.

The most challenging part was trying to keep all the food warm while we are church, but still have it be ready by the time we got home. I made up the potatoes in the oven in the morning and then put them in the crockpot to stay warm during church. I also had pre-cooked sausage that I put in a crockpot. The quiches I made the night before and microwaved/kept warm in the oven. I had some pots of coffee ready to go before church and they stayed warm in my press pots.

I guess looking back, I didn't need to be in such a rush to get everything ready to go since people seemed to be relaxing after church. It is so hard to know!




As you can see from above, I did lots of my shopping at Costco. They have great items for entertaining. I ordered a cake....so good and only $16.99!! However, it was way too much cake and I ended up tossing lots of it because otherwise I would just keep eating it. :o(




I didn't have a chance to take a photo of Michael in his special baptism outfit, but I snapped a few while he was busy talking to Grandma! Michael had so much fun, he barely napped all day!

Another special day in the books!
